I’m so excited to share these bars with you for episode 10 of healthy easy snacks because I used to make these ALL the time. (These ones and a version with pumpkin instead of banana which are also insanely good.) 

I recently stumbled on @dishingouthealth version of banana peanut butter oat bars and was inspired by her to remake my own and I’m so happy I did. These babies are going back into my weekly rotation! Recipe below. 

BANANA OATMEAL BARS 

* 2 ripe bananas
* 1/2 c peanut butter 
* 1/3 c maple syrup
* 1 tsp vanilla 
* 1 1/2 cups oats
* 1/2 tsp cinnamon
* 1/4 tsp salt
* 1/2 tsp baking powder 
* 1/3 cup chocolate chips

These are so soft and fudgy and you would never even know they contain chickpeas! Plus they’re high in protein with no refined sugar! IB: @theconsciousplantkitchen 

You’ll need:
1 can chickpeas, drained and rinsed (15 oz can)
3/4 cup organic creamy peanut butter (can sub almond, cashew, or sunflower seed butter)
1/3 cup pure maple syrup 
1/4 cup oat flour
2 tsp vanilla extract
1 tsp baking powder
1/4 tsp sea salt
1/2 cup dark chocolate chips
optional topping: flaky salt

1. In a food processor, combine all ingredients (minus the chocolate chips) until smooth. 
2. Stir in chocolate chips.
3. Roll the mixture into balls and place on a parchment lined baking sheet. It helps to use meal prep gloves
