Spicy Tomato and Lentil Soup: really good. Skipped the ginger, and didnt have the sweet potato which I'm sure would be good in it. Added quinoa and red curry paste instead of tomato paste. Very flavorful, filling and healthy! Yum.

Sweet Potato, Broccoli & Cheddar Patties: 1 large sweet potato, 2 c broccoli, 2 oz cheddar cheese, salt & pepper. Bake sweet potato in oven until soft. Scoop out potato into bowl. Chop up broccoli, mix in potato, add cheddar cheese, salt & pepper. Make 6 patties. Add oil to pan, bake at 400 for 30-40 minutes, turning halfway.
