This recipe is one of my favorite types of bowls – a vegan buddha bowl – that is named thusly after the food in the bowl piling up to look like buddha’s belly! But rest assured, it definitely won't be giving you a buddha belly.
Chickpea noodle soup is vegan comfort food at its finest. Warming, easy to make and ready in 30 minutes. I am using Lentils and white beans instead of chicpeas, I am adding lemon juice and also Bok Choy & Spinach.
