Ingredients: 2 courgettes 1 red onion 250g halloumi cheese 14 tomatoes 1 tbsp olive oil 2 tbsps lemon juice 2 tsps thyme 1 tsp dijon mustard Method: 1. Thickly slice the courgettes and cut onion into wedges. 2. Make up skewers with halloumi, tomatoes, courgette & onion (makes roughly 8). Cover and chill until ready to cook. 3.
