Recipes that I have tried- and the verdict.
Happy days, I accidentally created something akin to cottage cheese, but completely dairy free ( but with more calories/fat unfortunately) Cut Violife Greek White into small cubes. Blitz briefly with The Coconut Collaborative Almond yoghurt. It should still have some lumps. I'm going to make this again with A) Chives B) Pineapple. I'm sure it would work with other brands but this particular combo was perfect.
The sweetness of the corn goes so well with zingy lime juice and creamy avocado. I made the salsa but not on the barbeque. I simply boiled the cobettes and then mixed with the kernels with the other ingredients. Absolutely delicious on top of a jacket potato. I'll probably buy more corn on the cob and cook it this way.
Ribollita is a substantial Italian soup made traditionally with cavolo nero cabbage. Although they don't suffer the same stigma as brussels sprouts , cabbages are an undervalued vegetable. I made this in the slow cooker, it is tastier than it sounds. Used some fennel too, but didn't make croutons. Loads of leftovers.
Rhubarb. Is it a fruit or a vegetable. Well, in terms of sweet or savoury it can be either, and here is a super simple slow cooker recipe. Indian lentils with spinach and rhubarb. I have made this and it was nice. Update: the recipe asks for 3 tbsp of dried / gound ginger but in actual fact it should be FRESH ginger. It is smelling really good by the way!
Simnel cherry tart. A cross between a fruit cake and a bakewell tart, a take on the seasonal classic . The tradition of decorating the cake with 11 marzipan balls (the apostles minus Judas) developed in the late Victorian era. Before that flowers were used.I made this. Not as pretty,but tastes yum. A bit like mince pie due to the fruit and jam.
