Cheese is great on its own but absolutely sings when paired with the right accoutrements!
What produce currently languishes in your vegetable bin? Whatever it is, don’t pitch it. Pickle it and give your next cheese plate an acidic punch instead. Happy National Cocktail Day! We're celebrating by taking a look at delicious alcohol-free "spirits." We are now firmly entrenched in the New Temperance movement, in which grown-ups who enjoy a stiff drink can do so but can opt out of the impairment (and the party pooping). Alcohol-free libations are meant to be sipped leisurely, before or after dinner, and give the drinker something more to contemplate besides bubbles. By Margaret Leahy
Spring has officially sprung and flowers are blooming all around us. It’s also peak time for soft-ripened goat’s milk cheeses, a seasonal specialty. Together, flowers and soft-ripened goat’s milk cheese make for a perfect spring delight—especially with a glass of rosé. ✍️: Michelle Vieira
Sherry. It’s a wine loved by the pros and misunderstood by the masses. It’s a fortified wine (which means additional alcohol is added) & is aged in above-ground cellars. The aging process is what creates the spectrum from dry to sweet, & it’s all about oxygen. Another aging process, called a solera system, occurs when young wine is continuously added to old wine in a barrel. Sound confusing? It can be. But here’s the good news: sherry & cheese are a natural match. Written by Noah Singerman
Like cheese, pâté can certainly stand alone, but uniting the two can lead to a match made in snacking heaven. Opposites usually attract—think salty with sweet, toothsome with creamy—but you’ll find that sometimes more of a good thing isn’t necessarily bad. ✍️: James Mellgren
"As I matured, so did my taste buds. I developed a taste for cheese with character—weird, bright, tangy, earthy, rich, nutty, salty, sweet; when time, temperature, mold, and terroir come together in perfect harmony to produce each unique flavor profile. Salumi (Italian for “cured meats”) are produced in a very similar fashion, so it makes sense to match them with their dairy counterparts." Text by Erika Nakamura Photo by Madison Trapkin

Manchego is the workhorse of Spain’s cheese world. It’s as natural in an old-time Jerez bar astride a glass of sherry as it is on a cheese plate in one of Madrid’s Michelin-starred restaurants. It’s also one of the most accessible cheeses in the world; it’s probably in stock at your local shop right now, and its rich, round flavor makes it a consistent hit. Whether industrial or artisanal, Manchego makes an excellent excuse to delve into the world of Spanish wine. #wineandcheese #winepairings
When pairing mushrooms with cheese, know that buttons pair well with cream cheese as well as parmesan, maitake hold up to pecorino and fontina, morels mix well with chèvre, oysters prefer nutty alpines, and feta is a good match for shiitake. Mixing mushrooms with chèvre and crème fraîche in savory turnovers is the perfect holiday appetizer. #appetizer #mushrooms
Mexico’s queso panela is from the family of cottage or farmer’s cheeses. A fresh, mild, lightly salted, pure-white cheese made from pasteurized cow’s milk, it’s a versatile cheese that can be served as part of numerous Mexican dishes, crumbled over salads or tacos. #queso #mexicancheese

We’ve said it before: Summer is the perfect time to pop open a bottle of your favorite brew and peel open a wheel of cheese while you’re at it. As the midday sun surrenders to a refreshing evening breeze, trade in your indoor wine and cheese party for some beer and cheese out on the porch.
