Crispy Chow Mein 👌 | By Ly Cooks | So good. Hi, guys. In today's video, I'm going to show you how to make chicken chow mein. To start off, I'm going to fry the steamed chow mein. Turn on the heat and you can put quite a bit of cooking oil, maybe about four tablespoon. So, this is the chow mein. It's a steamed chow mein. I'm going to fry one package at a time. Okay, now that the oil is hot, I'm going to put it in and lower the heat to medium heat for timer for 3 minutes. So, you can fry them three minute on each side. So I have two pieces of chicken breast. I'm just going to give it a good marinade. One pound of chicken breast, half tablespoon of light soy sauce, half tablespoon of oyster sauce, one teaspoon of brown sugar, and I'm going to put baking soda to tenderize the meat. I have quarter teaspoon of baking soda and chicken powder. I'm just going to put half teaspoon. And I also have 1 teaspoon of cornstarch. Okay, now just mix well. Set this aside for 10 minutes and during that time you can fry the noodle and prep the vegetable and blend the vegetable. I have two carat of Jillian Pillar to make the design. Gonna blanch a lot and I can save the vegetable for next time stir fried. One package is done. Take it out. Ooh look at the color. Perfect. I'm going to take it out and put in the plate for now. So, as you can see, there's more oil so you don't have to add anymore for the second package and Same thing. Put timer 3 minutes. So you boil some water and add a little bit salt. Oops. Maybe that bit much that's fine. Because we're going to rinse it out anyways. Half tablespoon of salt. Bring the water to a boil and I have the carrot. This one two carrots. I'm only going to put half of it for the chamber in it. You can put timer for one minute before you add in the broccoli. Okay after 1 minute. Now we can put the broccoli. This one lots of broccoli. Like I said, I'm only going to use maybe half of it, half of the vegetable for the chow mein. Okay? Stir it a bit. And now put timer for one minute and here after you cook it for one minute one more minute so in total is about just a bit over two minutes drain out all the hot water first Okay, now that the broccoli is completely cooled down. So, I rinse it a couple time until the water is cold and then when you touch broccoli, it's it's crispy, it's not soggy. If you don't rinse it with cold water, you blanch broccoli will become too overcooked and at the same time, keep the broccoli crispy. Let it drain out all the water. Other vegetable that you may need. So this one if you want to put you can snap our cabbage. I also have some onion. Okay let's make sure that they don't stay together. Once you got the onion, the garlic, the vegetable all done. Next you can prep the sauce. Sauce is really important. Here I have room temperature water. Two and a half cups of water. 1 teaspoon of salt. One tablespoon of sugar. One tablespoon chicken powder, one tablespoon oyster sauce, one teaspoon of dark soy sauce for color, quarter teaspoon of pepper, need some cornstarch to thicken the sauce. I'm going to put one and a half tablespoon. Okay, stir well to dissolve the cornstarch. So it take about 15 minutes to prep all this. Fry the noodle first. Marinate the meat. Prep the vegetable. Cut up any other vegetable that you need and also prep the sauce. Okay, turn on the heat. Add some cooking oil. Once the oil is hot, add some minced garlic. Stir it a bit. And you don't have to wait until the garlic turn brown because we're going to fry these chicken with it. The marinade chicken. Add them all in. I because if you wait until the garlic turn brown then it may burn because right now it may take some time to cook the chicken stir it it will get brown along the way after cooking the chicken let it brown up one side and then after flip it okay after you cook it on high heat a few more minutes on the other side okay let's check oh yeah okay it have good color now I'm going to take them out pour everything out oh add a bit more cooking oil the pot is hot of half medium onion. Cook it about one minute first. After you cook the onion on high heat for 1 minute, now we can add the garlic. Add it to the side. Let it brown up on that side for now. I'm just going to add a bit more coconut oil. Now that you see the garlic turn lightly brown. Stir everything together. And the sauce that I made. Stir it. Make sure that the cornstarch is fully dissolved. Okay. Adding the sauce. Bring the sauce to a boil and when you see that the sauce boiling add the Napa cabbage this one is not much is maybe about not even 100 gram okay stir it a bit it doesn't take that long to cook the Napa cabbage and once you add that in I have my blanch broccoli and carrots I'm only going to put a coin to how much I like so I blend a lot of broccoli and carrots so I I won't put it all I will save some for next time stir fried okay add as much your desire. Okay, I'm going to put that much. I'll just stir. Just stir it only maybe about 302nd and after that you can turn off the heat because the broccoli is a like kind of softer and it's still crunchy but if you cook too long it will become too overcooked now turn off the heat and add the sesame oil sesame oil is quite important if you want to have that taste like the restaurant they use sesame oil to enhance the flavor okay stir it one last time You have this. Now we're going to pour everything in here. And the meat. I'm going to put only half so with the pan. If you want more, then you can put more. The reason I didn't want to put the meat in the stir fry so this way when you add in the meat, the meat will show up on top. Yeah. I love vegetable. It just cover all the charming. Give this a taste test. So good.
