Risotto is probably one of my favorite things in the world to eat. It's so creamy, cheesy, and delicious! When I'm craving risotto, I make a version using brown rice and almond milk, so it's not as creamy as using typical arborio rice (not that arborio rice is "bad" for you, I just typically stick with brown rice in my pantry), but it's still satisfying!
