You’ll be making this on repeat 🤤 INGREDIENTS: Ingredients: 1 cup/150g of chopped nuts & dried fruit (we did a mix of cashews, cranberries & raisins; these are optional for a crunchy addition) 1/2 cup/50g of cacao or cocoa powder 1/2 cup/150g of natural nut butter (sub with sunflower seed or tahini for nut free) 1/3 cup/80g of melted coconut oil 1/3 cup/80ml of maple syrup HOW TO: 1. Line a large dish (ours is approx 24cm x 20cm) with a reusable baking sheet (folded in half to fit easily). 2. Add all of the ingredients to the sheet and gently stir to combine (you can do this in a separate bowl but I’m all for minimal dishes to wash 🙌🏼). 3. Cover and place in the freezer to set for 1-2 hours, then remove from the sheet, chop into desired sizes and enjoy! Cut your chicken thighs into cubes and put in a large gallon zip lock bag. Once prepared throw in your marinade ingredients, corn starch, soy sauce, hoisin sauce. No need to let this sit you can combine and cook right away 2. in a large frying pan spray cooking oil and cook your chicken 5-6min each side until fully cooked through 3. while your chicken cooks prepare your sauce with the ingredients above, then set aside 4. once you chicken is cooked remove it from the pan and set aside while to cook your veggies, you can use any vegetables but I used asparagus and onions. 5. Once your vegetables are fragrant 2-3min cooked, add your peanuts and sauce, combine until it starts to thicken up then finally add your chicken back in combine and serve! 6. I served on a bed on jasmine rice and topped mine with red pepper flakes and green onions! This will make 4 meal preps for the week ready to grab and go and AMAZING to re heat. ENJOY NOTES; to save on fats you can use chicken breast instead of thighs and to save on carbs you can use cauliflower rice instead of jasmine. Feel free to use any vegetables you have/want. The salty savoury gochujang stock does all the hard work for you, flavouring (and seasoning) everything perfectly. I like this spicy so use 2 tbsp of the gochujang paste but if you prefer a more mellow vibe, add 1 tbsp and adjust the soy sauce after cooking. Give you rice a quick rinse if you fancy and chuck into a saucepan and add the chicken. 2. Whisk the stock, gochujang paste, soy sauce, sesame oil and vinegar. Pour over the rice and add the garlic and ginger. Stir together and bring to the boil over a medium-high heat. Cover, reduce the heat to medium and cook for 8-10 minutes or until the rice has absorbed most of the stock. Reduce the heat to super low and cook for 20-25 minutes or until or until the chicken is cooked through and the rice tender. 3. Remove the chicken from the pan and add half the spring onions the rice. Mix together with a fork to separate the rice. 4. Slice up the chicken and serve with bowls of rice. Chicken mince, sage & onion stuffing mix and a little dollop of red onion chutney, wrapped up and plaited inside golden puff pastry...This is the perfect midweek mini roast. You can prep these ahead and have them with crispy roast potatoes, some veg and a big puddle of gravy. This makes twice as much filling as you need, so you can even make a few roast balls with the other half to pop in the freezer! I have written up the recipe for this below and I would love to know what you think! A x Makes 4 Mini Plaits 170g Sage and Onion Stuffing mix 425ml boiling water 500g chicken mince Salt and ground black pepper Ready rolled puff pastry 4 tsp red onion chutney Tip the stuffing mix into a bowl, pour over the boiling water and give it a good stir. Leave to rest until cool Add the chicken mince to the bowl, season with salt and pepper. Use your hands to combine the mince and stuffing, so it's thoroughly mixed. Heat the oven to 190C fan Cut the puff pastry in half lengthways and then in half widthways so you have 4 equal rectangles. Place one of the rectangles vertically in front of you and spread a tsp of chutney down the middle. Leaving a 1cm gap at the ends and a 2.5 cm gap along each side. Place around 2 heaped dessert spoons of the filling lengthways down the centre of the pastry leaving the same gaps around the edges as you did for the chutney. Flatten the filling out a little and make sure it's evenly spread. Starting in the top left corner cut 0.5cm wide diagonal strips into the pastry from the filling outwards. Repeat on the right hand side. Trim the end pastry pieces a little so they fold neatly over the ends of the filling. Fold the strips of pastry alternately into the middle crossing over each other. When all the pastry is folded up and the filling is encased, gently press down the tops a little so the pastry sticks in place. Brush with beaten egg. Place the plaits on a lined baking tray. Bake at 190C for 25-30 mins or until the filling is cooked through | Amy Sheppard
