Stews have been made across the world since ancient times. A simple slow cooked dish using economical cuts of meat and bulked out with veggies. I have used a short rib ‘plate’ - basically the short ribs still attached to each other. It’s perfect for slow cooking and I love that it can be cut into chunky slices that just pull apart. With a crowning glory of fluffy dumplings, it’s a family favourite and a bowlful of this is sure to cheer even the most dreich of days! 

Serves 4-6
3 rib short rib ‘plate’
265g sliced onion (2 medium)
135g sliced celery (2 stalks)
380g Turnip/swede chopped 
280g carrots chopped
5 garlic cloves
1 bay leaf
2 tbsp porcini powder
Good splash Worcestershire sauce
1 litre beef stock

There’s never a complaint when fish pie is on the menu at our house. Comforting and easy, if the weather’s a bit grey, or you just want some comfort bowl food, this dish has your back.

Serves 4-6 people

750-800g mixed fish (I used, salmon, rockling & rock flathead)
8 large king prawns
3 hard boiled eggs
1 leek, finely chopped
100ml white wine
1 bay leaf
50g butter
40g plain flour
500ml whole milk
2 tsp Dijon Mustard
1 tbsp baby capers
2 tbsp chopped chives
2 tbsp chopped parsley
Salt & pepper to taste

800g - 1kg potatoes boiled whole & pushed through a sieve
100 ml whole milk
50g butter
2 egg yolks
1 tbsp each Dijon & Wholegrain mustard
Salt and pepper to taste

Another wonderful Scottish name with Orcadian heritage for a delicious side dish. It’s pretty simple really, neeps (Swede) and tatties (potatoes) both cooked and mashed together. I prefer a slightly more potato heavy ratio, but make it to your own taste. My daughter won’t eat Swede on its own, but she hoofs this down no question…as she does rumbledethumps! I’m all for the hidden veg! 

Serves 4-6
600g peeled and chopped Swede
900g peeled and chopped potatoes 
Salt and pepper to taste
50g butter (plus more to serve)
50g beef dripping (if you like)
1 bunch of chives, finely chopped

Welsh rarebit is the well known version, but Scotland has a version too, as does England! If you crave cheesey toasty snacks like me, you will love this. Yes sure, it’s just cheese on toast, but it’s so good! Making a paste with the cheese makes such a difference when you add the spices - mum used to just use milk when she made it for us as kids, and obvs didn’t add any whisky! But it takes me back and it’s still the best version of cheesy toast for me 🙌🏼🏴󠁧󠁢󠁳󠁣󠁴󠁿

Serves 1
70 g finely grated cheese (I used smoked and vintage cheddar)
1 tbsp mascarpone 
1/8 (eighth) tsp allspice, white pepper, black pepper & mustard powder
1/2 (half) tsp whisky

Mix all paste ingredients together.
Spread a nice piece of sourdough

Traditional colcannon is typically made with mashed potatoes and cabbage or kale. We like to add in buttery sautéed leeks and a little bit of white cheddar (because why not) and it’s SO DELICIOUS. 

I never thought I would say this could be better than regular mashed potatoes, but I really think the Irish are onto something 👀😍

Colcannon is actually traditionally served on Halloween, but it’s definitely a fun recipe to try for St. Patrick’s Day! It’s fantastic on its own or paired with a stew or roast. Tbh I couldn’t stop eating it straight out of the bowl!
