Brinjal Fry
Brinjals :2 Nos 2 tsp Kashimiri chilli powder 1/2 tsp turmeric powder 1/4 tsp sambhar powder 1 tbsp coconut oil 1 tsp ginger garlic paste salt to taste oil to shallow fry Instructions: Wash and cut the brinjals into medium thick circles. Make a mix of the curry powders with ginger garlic paste and coconut oil. Add salt to it. Gently coat both sides of the brinjals, (the masala may appear dry now, but the brinjal will release water when it sits in the marinade, hence no need to add any water to it.) Let it sit for 30 min , give it a quick mix again to coat the masala. The brinjal will appear wet now and the masala is well coated. Heat oil in a pan and Shallow fry Brinjals on medium flame on both sides. Enjoy with some hot rice and Dal.
