The cooking method is simple, building flavor with each step. Serve with mashed potatoes, creamy polenta, plush Parker House rolls, or wide ribbons of pasta, so none of that sauce goes to waste.
Braised Pork Ribs
Ingredients • 600g of pork ribs • 2 shallots, minced • 5 garlic cloves, minced • 1 tbsp ketchup • 1 tbsp Sriracha, or any Chilli sauce • 1/2 tsp pepper • 1/2 brown sugar • 1 tbsp white sugar • 1 1/2 tbsp fish sauce or soy sauce • fresh chili, fresh onion for garnish • 600 ml of water, separated • 4 tbsp cooking oil Method • 1) Place the ribs in boiling water pot, keep it boil for about 3 minutes then remove. Rinse under the water. Pat dry and fry them in a frying pan over medium high heat with 4 tbsp of cooking oil until they're golden brown (don't cook them too long). Transfer to bowl. • 2) Add minced shallots and garlic. Fry until they turn lightly golden then remove from heat immediately so they do not burn. • 3) Use a strainer to separate the oil and garlic with sha
