Home style Chicken Baida Roti…made with left over chicken kheema and left over chapatis.  Coat chapatis with a little egg, put a little kheema in the middle, fold over and cook on a tava with very little oil. Yummy quick snack….My fussy 12 year old wants to eat it every day!

Combine cooked chopped spinach (cooked with a little garlic), chopped peppers, thinly sliced chillies, cooked and chopped bacon, cooked and chopped sausage (I used chicken pepper sausages…can use any). Place in a lightly greased dish. Beat 5-6 eggs (or more depending on the quantity of other ingredients) with salt and pepper and a little milk and pour over veggies. Top with grated cheese and bake in a hot oven till cooked through and slightly browned on top. Slice , serve and enjoy!

Nuts and dried fruit tidbits. Grind mixed nuts( I used almonds, hazelnuts, cashew nuts and peanuts) with dried fruit (I used dried cranberries-black and red and dates) together in a mixie. As you grind the nuts will release their oils and bind the mixture together. Remove and shape into little balls and refrigerate. These were the nuts and dried fruits that I had on hand..I guess you can use any and and more or less in an equal proportion. Do try and enjoy!
