Vegan, gluten-free carrot almond muffins 1 cup ground oats 1 cup almond meal 1½ grated raw carrots ​¾ cup unsweetened applesauce or ‘compote’ ¼ cup melted coconut oil ¾ cup maple syrup 1 tbsp apple cider vinegar 1 tsp vanilla extract 1½ tsp baking powder 1 tsp baking soda Pinch of salt Preheat oven to 220C or 428F.
