Vege mini quiches - great for taking out as a shared plate. You can use whatever veges you like - mushrooms, peppers, courgettes are ideal, mix with egg whites and herbs and seasonings of your choice, then bake in muffin pans for about 20 minutes. I used nutritional yeast flakes in these to give a savoury cheesy taste, yummy! They're also yummy made with cottage cheese.
Crustless, Gluten-free mini-quiches! 7 eggs, and 1 tbsp milk Use either muffin or cupcake liners, or a lot of non-stick spray or butter in the pan. Pour whipped egg mix into cups, then add cut up bacon (pork or turkey), broccoli florets, and crumbled (goat) cheese (I used 2 oz). Top with chives or green onions and cook at 350 for 20-30 mins or until golden brown. About 110 cal each in a large muffin pan. This dish definitely fluffs up as it cooks, so don't try to fill up the cups!
