It's not Ramen soup but it sure was tasty and soup-er healthy! . Start the base with fresh #organic shallots, ginger and garlic in EVOO. Add mushrooms and carrots. Sauté for a bit then add #homemade chicken broth and bring to a boil. Then add whatever goodies you want. I added #quinoa pasta, Napa cabbage, an egg, green onions and watercress. Spiced it up with a little turmeric and cayenne pepper, a cube of frozen chopped cilantro, and a dash of Thai red curry paste and liquid aminos. Yum!
