Made these so many times. They are the reason I now say that I like brussel sprouts. Just coat them in salt, olive oil and pepper and roast them in a really hot oven. Great when you are making a chicken already since the oven is already the perfect temp.
Rice Pilaf with Almonds (I made this without the almond - I just didn't have any - and tweaked the recipe a bit with brown rice and olive oil instead of butter. Could probably go with any chopped veggies!)
