Cranberrry Coconut Macaroons (Makes ~35 cookies) 1 cup rinsed & finely chopped fresh cranberries 2/3 cup flour 1 14 oz. bag shredded sweetened coconut 1/4 tsp salt 1 tsp vanilla 1 14 oz. can sweetened condensed milk (1/2 cup chocolate chips, optional) Preheat oven 325°F. Toss in a large bowl, cranberries and flour, stir to coat. Add remaining ingredients. Stir until well mixed. Place batter by teaspoonful on baking sheet, lined with parchment paper. Bake for 20 minutes, or until golden.
