Love this easy lunch idea from @lizweiss. Great way to use up any bits and pieces hanging around from the long weekend. Liz says: "Guacamole made with a big handful of cilantro and lime gorgeous fresh cherries creamy cheese from Vermont chicken salad rainbow carrots and English cucumber." Yum. Thnx Liz.

A handy fall-back when you have run out of green leafy stuff OR you want colour on the salad buffet. Ideal for "bring a salad" as it teams with almost everything! Another top idea from @cheesenwhiskers. She says: "Sunny spring weather = lighter dinners. We haven't had rice paper rolls for aaaaaaages. I marinated some green prawns in a blend of coriander garlic ginger soy & lime then teamed them with crispy veg & some bean thread noodles. Easy peasy looks pretty & a great way to eat more veggies!"
