Ingredients: 1 lb ground beef, 1/2 onion, chopped, 2 tablespoons olive oil, 1 can black beans, rinsed and drained, 1 cup frozen corn or fresh if you have it, 1 package of taco seasoning, 2 – 3 large bell peppers, halved and deseeded,   – I used 2 so I could have left over filling for Nachos!! 1 cup of shredded cheese.
