Double Layer Pumpkin Cheesecake -- Made this with an oreo crust. Yum! I added 1/2 cup extra each of cream cheese and pumpkin to help balance out the extra sweetness from the Oreos. Turned out delicious! This was very easy and the hit of our Thanksgiving dessert table. Next time I will use a gingersnap crust as I believe it will compliment the flavors of the cheesecake really well.
