Homemade tsatziki! A much cheaper option than store-bought that is just as delicious and so easy: 1 med. tub of plain Greek yogurt (I used nonfat), 1/2 a cucumber grated, a few generous tbs of dill (fresh is the best), a couple healthy tbs of lemon juice, and salt & pepper to taste. Delicious!

Persimmon Bread. Got on the Food Network site, originally from From the New Orleans Time Picayune. Makes 2 loaves and freezes well. This is absolute perfection! The only changes I made were to leave out the nuts and to use 1/2 tsp powdered ginger instead of the cloves and allspice. Also, mine was done in 55 minutes. Much easier than the James Beard recipe and just as good!
