Andes Mint Brownies - a box of brownie mix + its added ingredients and a package of Andes Mints. That's it! Pour half of the prepared batter in a 9 inch pan, layer the unwrapped candies in the middle, and pour the rest of the batter on top and bake according to brownie mix package directions.
The base is a wonderfully dense and chewy chocolate mixture that includes coconut and graham cracker crumbs. The base is topped with a peanut butter filling that reminds me of a Reese’s peanut butter cup, and then a final layer of chocolate ganache is spread over top. Aside from the base, the rest of the bar tastes very similar to the Buckeye Brownies that I made earlier this year.
