Baked Artichoke Chicken- won best recipe "The Chew" and for good reason. This was 10*, fast, easy and delicious! I ended up not having red wine vinegar, so I used the white wine and olive oil. I also did not use tarragon, as I don't like it, but rather fresh thyme sprinkled on the dish. I also used Chicken tenders (all I had at the time) and it was great and took less than 30 minutes to cook. Parmesan chicken made easy and flavorful with using mayonnaise while cooking. After baked, add some marinara sauce and mozzarella cheese, if you'd like. Many cooks have experimented by using yogurt (Greek, plain, 0%, or light), and/or sour cream (regular or light) in place of the mayo and had great results.
Chicken Avacado - now on my favorite recipe list! I did it a little differently. Dipped in flour, egg/milk mixture than ITALIAN bread crumbs. Lined baking sheet with tin foil and baked at 350 for about 10 min on each side. After chicken was cooked through, I added sauce, avocado and mozzarella/parmesan blend. Baked 5 more min. until melted. So good!!
I think this has been one of my biggest Pinterest disasters to date! I mixed my own blackening seasoning and used way to much cayenne, and also used chicken breasts that were way too big. Almost smoked my husband and myself out of the apartment!
