Here& a great recipe for Mediterranean Stuffed Zucchini. It& zucchini stuffed with savory onion, yellow squash, ripe tomatoes and crumbled feta cheese. Makes for an impressive vegetable side dish, or two servings make a healthy vegetable entree.
