Coconut ice: Considering my obsession with all things coconut, there was a certain inevitability about this recipe appearing sooner rather than later. Having grown up by the seaside, one of my earliest memories is of sitting on the beach eating sweet, crumbly coconut ice from a paper bag and my mother would regularly make it for me growing up! I made some Mickey Mouse iced cookies recently for a friends little boy and had some leftover red icing. Instead of wasting it, I rolled it out and cut it into stars with stamp. I cut up some small squares of greaseproof paper and stacked them in a small plastic lidded tub and labeled. I also made tiny "red berries" with the scraps. Hopefully this will save some time at Christmas when I've got ridiculous amount of baking to do.
