Artichoke and White Bean Sandwich Artichoke and White Bean Sandwich  -- mashed beans, artichoke hearts, and sauteed spinach __ Heat oil in med. saucepan over medium heat. Add 1/2 clove minced garlic & cook until fragrant, about 1 min. Add 1/2 C. baby spinach, stir until wilted, about 2 minutes. Season with course salt and pepper.  Spread mashed beans on one of slice toast. Top with halved artichoke hearts and sauteed spinach. Top with second bread slice.
