Fiesta Chicken Casserole: 2 cups chicken breast grilled & cubed 2 cups medium shell pasta cooked 2 cups cheddar/jack cheese blend 1 can of cream of chicken soup 1 can Rotel 1 can green chilies 1/2 cup of milk Cover with cheese salt and pepper to taste! Bake at 350 for 20 minutes
Spaghetti Squash Casserole : instead of tomatoes i used a can of mild rotel and added chicken. We loved it! It might become a regular meal in this house! Substitute bread crumbs or just don't put them on to make this meal gluten free.
How to Cook Spaghetti squash: Prick several times w/ fork. Microwave squash min to soften, cut in half, scoop out seeds, and bake cut-side down for 45 min at Use fork to separate and scoop out strands. Then just add your favorite spaghetti sauce!
