Today’s lunch is a garden salad—this and that picked right out of our garden. We smeared a big spoonful of fresh ricotta on each of two plates, then grated lemon zest on top, added a good drizzle of olive oil, and some salt and pepper. Then we piled on: blanched sliced tiny zucchini, quartered tomatoes, torn up basil and zucchini blossoms, finely diced salami, and a lemony vinaigrette spooned over all.
Eggplant Rollatini | The Adirondack Chick I grilled eggplant instead of griddle. To the inside I added slivers of roasted red peppers and sautéed mushrooms (had some left over from another recipe) and fresh basil. I added a tad of pecorino to my cheese mix. Then I rolled it all up and put them in a dish with a bit of marinara. Threw a tiny bit of mozzarella over the top. My house is smelling DELICIOUS. Serving it up with green salad! I'm sure it will be a hit!

So this weekend, when we noticed an ailment affecting the foliage on some of our plants, we thought we'd investigate and share the results with you. The vegetable garden consists of high and low raised beds divided by mulched paths with a rustic fountain in the center. Amy plants mainstream vegetables and herbs that are easy to grow—tomatoes, squash, cucumbers, peppers, rosemary, basil, sweet potatoes—as well as zinnias for cut flowers. Having the chicken coop close to the garden cuts down on trips from the house.
