Ingredients

Meat
• 1 Chicken breasts - cut in half across the lobe, skinless
• 1 Of all bits of skin or fat or a combination of white and dark meat
• 1 Thighs, skinless
Produce
• 5 cloves Garlic
• 2 inches Ginger
• 1 Greens, whites and light
• 1 Large or 2 medium leeks
• 2 Limes
Canned Goods
• 1/2 cup Chicken bone broth or stock
• 1 cup Chicken broth
Condiments
• 1/4 cup Soy sauce, light
Pasta & Grains
• 1 Korean or other short-grain rice
Baking & Spices
• 2 tbsp Brown sugar, light
• 1/3 cup Gochujang fermented chili paste or extra-spicy gochujang
• 1 Salt
• 1 Salt and pepper
• 1 Sesame seeds, Toasted
Oils & Vinegars
• 2 tbsp Rice wine vinegar
• 2 tbsp Safflower or canola oil or olive oil
• 2 tbsp Sesame oil, toasted
Liquids
• 1 1/2 cups Water
Other
• washed and sliced ½-inch
• 6 Boneless
• cutting each breast into 3 pieces OR 12 boneless
• halve the top of lobe horizontally
• halved
• juiced
• peeled and cut into 1-inch-long very-thin matchsticks
• sliced or chopped
• to serve
