Res Hall Iron Chef.  This program is to help spark competition and identify the culinarily inclined.  Each team of three gets a box full of ingredients and cookery.  Explain that they have one hour to make something with the items in the box.  Let the other residents who attend the program vote on their favorite.  The winner receives a small prize.

I think I'm going to start with a 5 lb. bag of sugar at the beginning of the year and challenge myself not to finish it until the end of the year. Knowing me, I'd best divide it into 12 portions and attempt to use just one per month. I love to bake, so this will be tough. If I'm "out" of sugar, I can't bake anything sweet.

Yummy Lean and Green Veggie Quiche!  (adapted from Sandy’s Kitchen Vegetable Quiche) Makes 1 serving 2 Light Queso Fresco & Chipotle Laughing Cow Wedges (1 Healthy Fat) ½ c Part-skim, low moisture, 2% shredded Mozzarella Cheese (1/2 Lean) 1 c Egg Beaters (1/2 Lean) ½ c Scallions (1 Green) ½ c Zucchini (1 Green) ½ c Tomatoes (1 Green) ½  tsp Pepper (1 condiment) ¼ tsp Salt (1 condiment) Lightly coat a square baking dish with Pam and add all of the ingredients.
