Chunky Vegetable Soup with Chorizo ~ We`re always looking for ways to add more vegetables to our diet without getting too boring. While salads are a fun way to get your greens, if you want a lot of vegetables all at once and still make something your husband will eat, this is the soup (practically a stew!) to make. This can easily be turned vegetarian by substituting vegetable consommé for the beef and omitting the chorizos.
