roasted okra recipe (My mom always got tiny okra strung on thread and dried, from Saudi Arabia) Cut each pod in half lengthwise, from stem to tip. Toss them with a tablespoon or so of olive oil and about a teaspoon of salt (I used coarse kosher salt). Spread them in a single layer on a baking sheet and place in a hot oven for about 20 minutes. You want them to get really dark, almost black.

1 tsp of gelatin = 1 tsp agar powder = 1 Tbsp agar flakes...... When trying to dissolve flakes, sprinkle over liquid and let sit 10 min. then heat on med till flakes dissolve, usually takes about 15 minutes. Powdered agar, let sit in liquid for 10 min then heat for about 5 min. I use agar in my vegan lemon curd and fondant and it works great. I'm experimenting with it in frostings. http://www.cheftalk.com/t/7034/agar-agar
