My wooden spoon is now forever purple, but these rhubarb blueberry bars are totally worth it. Made them tonight and they are delicious!

Blueberry Rhubarb Bars

My wooden spoon is now forever purple, but these rhubarb blueberry bars are totally worth it. Made them tonight and they are delicious!

The recipe is called Rhubarb Crunch: Mix well:  1 cup margarine, 2 cups oatmeal, 1/2 tsp. baking soda, 1/2 cup flour, 1 1/2 cups brown sugar, 1/2 cup coconut, 2 cups corn flakes.  Leave some for topping, and press the rest into 9 x 13 pan.  Place 4 cups chopped rhubarb (raw or frozen) on top of base.  Boil 1 cup milk, 2 tbsp. cornstarch, 1 egg and 3/4 cup white sugar until thick, stirring constantly.  Pour over rhubarb. Cover with remaining crumbs.  Bake at 350 for 30 minutes.   Enjoy!

Combine rhubarb, sugar, flour and cinnamon and put into 8" x 8" x 2" glass baking dish.   2. Combine flour, brown sugar, rolled oats and melted butter and sprinkle streusel over rhubarb mixture.   3. Bake at 375 for 35 minutes.
