Roasted Corn Chowder with Coconut Milk, Lime and Cilantro / My edits: Add more of each spice. Double the roasted tomatoes, add corn or more sweet potatoes if no chicken/tofu. Add lime juice to taste instead of juice from two limes.
The chowder is healthy, clocking in at just under 250 calories per serving! I will definitely give this a test run for my Shrinking On a Budget Meal Plan. This would also be a great use for Planned Leftover chicken.
