Chicken & Veggies Over Rice 16 oz cubed chicken breast 2-3 tbsp. flour 1 tsp. Greek seasoning Pinch of salt and pepper Shake well in a bag then cook in 1-2 tbsp olive oil. After chicken is golden add 1 tbsp butter and veggies. I like red bell pepper, carrots thinly sliced, and water chestnuts and sometimes broccoli. Sauté 2-3 minutes then add 1/3 cup chicken broth and 3 tbsp. Italian dressing. Cover and let simmer 5 minutes then serve over rice.
