Apple and Pomegranate Quinoa and Kale Salad with Feta in a Curried Maple Dijon Dressing - Good not absolutely AMAZING, but good. A bit heavy on the vinegar for me, I might try a different dressing next time; that or up the curry.
A tortellini salad to feed a crowd (40 servings).... I cut it in half and made it as a side for our company at the lake house. It was super easy! 7 min. start to finish and made a huge salad bowl full. I added more olive oil than it calls for because I made it the day before and was afraid it would get sticky and dry. It turned out great! I will definitely make this regularly for the crowds we have over the summer. Good find - easy!
