I decided to veganize this recipe, for no reason really - other than I wanted to try making a "chia egg". I've made flax egg substitute, and to be honest I never have really developed a fondness for flax. Fortunately for me, chia is just as (or maybe even more) healthful, and I love the added crunch it gives.I have only standard 9x5 loaf pans, but I think I need to invest in some 8x4's so that the volume would be a little higher. The batter does rise some, but not a lot, and for a standard…

Place a layer of parchment paper on each dehydrator tray, and spoon batter onto individual trays, spreading it out with a spatula to create one large, round form. P.S. I added fresh coconut on top of the mango bars and raisins on top of the banana walnut bars!

Every week I try out new flavors of my raw, vegan energy bars. These bars are loaded with nutritious ingredients that provide you with all of the vitamins and food groups you need throughout the whole day. Here I have "chocolate peanut butter", "mango pinapple", and "banana walnut".

I leave the dehydrator on between 125-135 while making the bars. Technically anything above 118 is not considered raw anymore, but I prefer to speed up the process that tiny bit more. Leave the bars to set for 5-6 hours.

After weeks of looking up fun, creative recipes for a mostly raw vegan I realized I absolutely needed to invest in a food dehydrator. This thing changed my life in so many ways! I make my own dried fruit, raw energy bars (that I live on during the day), seed crackers, and veggie chips. It is not a quick turnout time, so if you are looking to start dehydrating then patience must be your friend!
