Crockpot Chicken Tortilla Soup 1 pound boneless, skinless chicken 1 can corn 1 can black beans 1 can diced tomato WITH juice 1 can enchilada sauce 1 can Rotel 1 can diced green chiles 1 white onion, chopped 1/2 cup chopped cilantro 1 can chicken broth 2 bay leaves 3 cloves garlic, minced 1 tsp ground cumin & chili powder 1 tsp salt 1/4 tsp black pepper 2 tbsp dry ranch dressing mix add after served (optional): lime juice avocados sour cream tortilla chips cilantro
Hamburger Soup: 1 1/2 pounds ground beef, 4 carrots chopped, 3 celery stalks sliced, 1 onion minced, 1 tsp minced garlic, 1/2 cup barley (pot or pearl is fine), 1 can diced tomato, 1 can tomato soup, 1 tetra beef broth or 3 cans broth & 2 cups water, 1 bay leaf. Brown beef in pan, drain fat, transfer to soup pot or crock pot and stir in all other ingredients. Simmer 2 hours on stove or until vegetables are soft and 4-6 hours in crockpot
- Slow Cooker Beef Stroganoff with Stew Meat - throw stew meat, cream of mushroom soup, water, onion and Worcestershire sauce in crock pot, stir in cream cheese at the end. Can use sour cream instead of cream cheese! Very easy recipe!
