Margherita Mini-Muffs... Wanted caprese and pizza, so I improvised. Started with toasted English Muffins Added homemade meat sauce. Sliced Grape Tomatoes. Fresh sliced Mozzarella. Fresh Basil Chiffonade. Extra Virgin Olive Oil drizzle. Salt @ pepper to taste. Baked at 325 for 15 minutes, checking every 5 until cheese has melted. Mangia!
Caprese Picks - 'one bite' friendly. Half a cherry tomato, basil leaf, mozzarella (marinated in my opinion is best), and top it off with a drizzle of balsamic vinegar. Serve room temp or put in the fridge for a bit. Mangia!
