Clean-Eating pumpkin pancakes! I made this recipe: 1/2 C. pumpkin, 1/2 C. old-fashioned oats, 1 C. whole wheat flour, 2 eggs, 1/2 TBsp olive oil, 2 tsp baking powder, 1 tsp vanilla, 1 heaping tsp cinnamon, 6-8 TBsp almond milk. Mix all ingredients in a food processor/blender and cook on med-high in frying pan or griddle. Be sure to oil cooking surface each time! Batter will be very thick unlike traditional box pancake mixes, just spread it around with a spoon.
