mediterranean salad: 2 cups diced cucumber, tomatoes,1 red onion, 1 TBSP chopped parsley, 1/2 TBSP mint, blk olives,1 TBSP EVOO, 2 TBSP red wine vinegar, 1 TBSP lemon juice, sea salt and pepper. Chop and combine veggies...add parsley, mint and olives. Dressing: in a seperate bowl mix oil, vinegar & lemon juice. Add dressing to the salad and mix well. Season with sea salt/pepper to taste.
