my easy mock rice pilaf--break up whole wheat/whole grain spaghetti in little pieces. saute until slightly browned in 1 tsp. butter. add vegetable stock/broth to cover noodles, add frozen peas. cover and simmer, stirring occasionally until pasta is cooked and stock is absorbed. TIP: i use homemade herb butter (butter, dill, parsaley, chives, pinch of salt and lemon juice) in place of regular butter. so yummy and under $1 a serving.
