Today I decided that I'd share my go to gluten free pizza recipe with you, rather than a baked good.

Polenta-Stuffed Peppers. I made these last night and they were incredibly good. I feared they'd be too plain (polenta + peppers) but the onion, butter, rosemary and cheese make them very savory. I added some shredded zucchini to the filling just for fun.

Stir shredded cheddar cheese and a bag of frozen corn kernels into hot polenta, then spoon into red bell pepper halves and allow to thicken. This dish can be prepared up to two days in advance, and warmed in the oven just before serving.
