1 Lb box Rottini Pasta. 1 Cup Grape tomatoes, halved. 1 (15 oz) can Black pitted Olives. ½ Lb Hard Salami, cut into small cubes or strips. 1 Cup fresh baby Spinach leaves. 1 (8 oz) package sliced mushrooms. ½ Lb White or Yellow Cheddar, cut into small cubes. 3 Tbls Fresh Basil leaves, chopped. ½ Tsp Red Pepper flakes. Dressing: 2 Cloves fresh Garlic, minced. 3 Tbls Extra Virgin Olive Oil. Juice of 1 Lemon. 1 (12 ozs) Bottle Italian salad dressing of your choice. Salt and Pepper to taste.
