Chicken Jalfrezi. Flavorful Indian spices and comforting heat make this slightly complex recipe worthwhile on a weekend day. It's easier than it looks -- basically marinate, cook, puree the sauce components, throw it all together and simmer. With tomatoes and bell peppers, it's a bit inflammatory so I've cut back on making it quite as often, but it's otherwise very healthy and a nostalgic reminder of my time in London.
Pan Roasted Lemon Chicken - This recipe is good, I would just use a little less thyme than what the recipe calls for. I also removed the skin prior to cooking. This meal went great with black beans and corn with green chiles for a side dish.Cooked:October
