Christmas Breakfast Casserole: Layer white bread (crust removed) in bottom of a buttered 9x13, mix together and pour over: 1lb drained sausage w/ 1/4 c chopped onion cooked, 1 lb cheese, 8 beaten eggs, 1.5 cup cream, 1.5 cup milk, 1/4 tsp mustard, S&P to taste. Refrigerate overnight. Bake at 350 for 45-60 minutes. Use foil for half if desired.
Hash Brown Potatoes (Use peeled, grated Russet Potatoes, squeeze excess moisture with cloth), coat skillet with 2 Tbls butter, , add garlic salt, pepper and touch of steak seasoning. Press down with spatula to crisp, flip then serve crispy and golden!)
Beef & Corn Enchilda Bake - Brown ground beef in large nonstick skillet; drain off fat if desired. Add corn, tomatoes, 1 cup cheese, salt and pepper and cook 2 minutes or until cheese is melted. Evenly fill tortillas with beef mixture. Arrange seam-side down in shallow 13x9-inch greased baking dish. Evenly top with enchilada sauce and remaining cheese. Cover and bake15 minutes or until cheese is melted and enchiladas are heated through. Serve, if desired, with sour cream.
