Pineapple and Shrimp Fried Quinoa - Use almonds instead of peanuts but not raisons (and maybe not peas). I could use either coconut aminos of homemade fish sauce too. Pineapple is one of the best fruits for my diet so I could have this dish every once in a while
Lobster Thermidor: 1 1/2 pounds cooked lobster, 2 T butter, 1 minced shallot, 1 3/8 c fish stock, 1/4 c wine, 1/4 c Greek yogurt, 1/2 t dijon mustard, 1 T lemon juice, 2 T parsley, s & p, 1/4 c Parmesan cheese cook butter,shallot, fish stock, white wine & yogurt til reduced by half. Add mustard, lemon juice, parsley, s Broil lobster meat in shell w/sauce spooned over & Parmesan cheese on top for 3 to 4 minutes, just until golden brown. Serve immediately.
