Pepe’s Coconut Bread Ingredients: 1/2 cup butter, softened 1 cup white sugar 2 eggs 2 tsp. coconut extract 1 cup fancy shredded coconut 1 cup sour cream 2 cups all purpose flour 1 tsp. baking soda 1 tsp. baking powder Cream butter and sugar. Beat in eggs & extract, then sour cream. Add the coconut. Fold in flour, baking powder & baking soda. Turn into lightly greased loaf pan & bake at 350 degrees for about 45 minutes. Makes 1 loaf, 9-10 slices. Serve toasted or warm. Freezes well.
