Salsa chicken-very generously cover the bottom of a crockpot with salsa of your choosing. Lay however many chicken breasts on top and cook. At least half an hour before eating shred chicken and stir into the salsa. Keep on low until ready to eat. I use this for tacos, enchiladas, quesadillas (so, anything Mexican), salads, etc. Chicken has great flavor and you can use it for many different meals throughout the week.
